Gluten Free Crepes

If you're on a low-histamine diet, chances are you are gluten free and miss eating breads and traditional breakfasts. These crepes are a delicious way to feed the urge for a doughy and delicious breakfast, without the gluten. Many gluten free baking recipes don't rise well because of how little structure there is when gluten is removed, but that doesn't matter with thin crepes. Plus, the seltzer adds some bubbles to make these nice and fluffy.

  1. Whisk all ingredients to thoroughly mix the crepe batter.
  2. Heat a large, flat skillet on med-high heat. Oil the pan to ensure easy release.
  3. Pour a ladle full of batter in the middle of the pan.
  4. Use a large flat object (I like to use a dough knife) to spread the batter to the edges of the pan in a sweeping, circular motion, from the center around the whole pan.
  5. Once the crepe is visibly solidified in all areas, fold one half onto itself, and then repeat to fold into a quarter stack.
  6. Remove from pan. Cook one at a time. Recipe should make 4 or so large crepes.
