Spatch-cocked chicken is one of the easiest and most flavorful ways to prepare a whole bird. Flattening the chicken allows for more even cooking, crispy skin, and moist, tender meat. A combination of salt, garlic powder, and sweetener helps the flavors really shine.
Ingredients
- 1 whole (approx. 4.4 lbs) of whole chicken
- 1 tablespoon of kosher salt
- 2 tablespoons of garlic powder
- 3 tablespoons of sugar or powdered allulose sweetener
Instructions
- Take a whole chicken and cut out the backbone, then press down to crack the rib so the bird lays flat with the breasts at the center and the legs splayed out to the sides.
- Cover generously with salt, garlic powder, and sugar/sweetener on both sides.
- Grill for 40 minutes in total. Start grilling for 10 minutes, then rotate. After 10 more minutes, flip the chicken. Grill another 10 minutes, rotate, and finally, grill for another 10 minutes before removing from the grill.
