  1. Mix the salt, sugar, garlic, and herbs in a bowl. Add to both sides of the rib-eye as a dry rub. Let rest while the vegetables cook.
  2. Add the oil to the pan with the carrots and onion. Cook on medium-high heat for 15 minutes, stirring occasionally until the onions are caramelized.
  3. Remove onions and carrots from the pan.
  4. Add in the rib-eye and cook for 2-3 minutes, rotate, cook for 2-3 more minutes, then flip.
  5. After flipping, add back in the carrots and onions. Cook for 2 minutes, rotate the steak, cook for another 2 minutes, then remove from heat and serve.
