  1. Trim excess fat from a 4-6 lb brisket, saving the fat for rendering later.
  2. Heat the trimmed fat in a cast iron pan to render a few tablespoons of beef fat.
  3. Add chopped onion, carrots, garlic, and herbs. Stir in brown sugar and salt.
  4. Cook for 10 minutes until the vegetables are browned, then set aside.
  5. Heat 2 TB olive oil in the pan and sear the brisket on all sides for 1-2 minutes each.
  6. Remove the brisket and set aside.
  7. Deglaze the pan with 1 cup of water to create a brown stock. Save the stock.
  8. Place the brisket, browned vegetables, and brown stock in a sous vide bag. Vacuum seal the bag to ensure the brisket is fully submerged.
  9. Cook in a sous vide bath at 160°F for 36-48 hours, covering the bath with saran wrap or foil to prevent evaporation.
  10. After cooking, remove the brisket and slice it thin, against the grain.
