Simple Chicken Soup

This simple chicken soup builds its broth in one pot from chicken, onion, carrot, and celery. Cooking the vegetables until they take on a little color adds sweetness before the chicken simmers gently until tender enough to shred. Thyme and sage go in near the end so their flavor stays fresh, leaving a rich, straightforward soup with plenty of chicken and vegetables in every bowl.

  1. Heat the olive oil in a large soup pot over medium heat.
  2. Add the onion, carrot, and celery. Cook for 10–15 minutes, stirring occasionally, until the vegetables soften and develop a little color and caramelization.
  3. Add the chicken, followed by 8 cups water and 1 tablespoon sea salt.
  4. Bring just to a boil, then immediately reduce to a very gentle simmer.
  5. Partially cover and simmer for about 3 hours, until the chicken is extremely tender and the broth is rich.
  6. Remove the chicken from the pot. Once it is cool enough to handle, remove the skin and bones and shred the meat.
  7. Return the chicken meat to the soup.
  8. Add the thyme and sage near the end. Simmer for another 5–10 minutes.
  9. Taste and adjust the salt and herbs as needed.
